Espresso Maintenance

MAINTENANCE · DESCALE, BURRS, RETENTION

Before you buy a new machine because the old one “got worse,” try cleaning it. Machines rarely get worse. They get crunchy.

Three jobs keep a home setup honest: descaling the machine, cleaning or swapping the burrs, and managing retention. Everything below comes from the manufacturers’ manuals unless we say otherwise. Advice here is based on specs, manuals, owner reports, and price. Your manual wins any argument with this page.

Descaling

Scale is mineral buildup from your water. It slows flow, messes with temperature, and makes a fine machine act broken. Each brand does it a little differently:

Breville Bambino Plus

Add descaler to the tank and fill with water to the DESCALE line. Put a 2 L container under the group and wand. With the machine off, hold 1 CUP and STEAM for 5 seconds to start. When it pauses, rinse and refill the tank to MAX to finish the cycle. The manual has the full sequence.

Breville Barista Express

There is a dedicated descale mode, started with a 2 CUP and POWER button combination; the manual has the exact sequence. Swap the water filter about every 2 months while you are at it.

Gaggia Classic Pro (E24)

Use Gaggia’s descaler, never vinegar, about every 2 months. The short version from the manual: mix half the solution into the tank, run some through the steam wand and some through the group, let it sit about 20 minutes, repeat with the rest, then run several full tanks of clean water through to rinse.

Vinegar is for salad. Gaggia says so, in writing.

Burrs: cleaning and swapping

  • Encore ESP: the cone burr pops out with a quick-release design. Brush both burrs about monthly. Never wash them. If the finest setting gets too coarse over time, a shim moves the range about 5 settings.
  • Sette 270: the cone burr and adjustment assembly come out for cleaning. Never wash the burrs or the adjustment assembly. After the first few pounds, the included washer can shift the range finer.
  • Barista Express: the upper burr comes out for cleaning, and the manual explains how to adjust it to shift the grind range.
  • Fellow Opus: brush the exit chute when the anti-static stops doing its job, about every 60 grinds per Fellow.

Grinder cleaning tablets are another option Baratza mentions for the Sette. Follow the directions on the package. The buttons below open Amazon search results, so check current price and that the listing matches your gear.

Retention: the gram your grinder keeps as a hostage

Retention is the coffee that stays inside the grinder after a grind. It goes stale and shows up in your next dose. It matters more for espresso, where a gram is a big share of an 18 g dose. For example, a former Fellow Opus owner on r/espresso reports roughly 1–2 g of retention (thread).

  • Weigh what goes in and what comes out. The gap is your retention.
  • After a big grind-setting change, grind and toss a small amount to flush the old setting.
  • Brush the chute regularly; old grounds build up there first.
